The method

Production of still wine, semi-sparkling and sparkling wine, with the Charmat and the long Charmat methods (this last similar to the classic method)

Respecting the tradition of the wine means also and above all respecting the nature of the vine and of the land. The method of cultivation used at Vignarosa consists of fertilization with natural methods and pruning that aims specifically at obtaining a low yield and high quality. Work goes on steadily, day by day, following the rhythm of the seasons up to the moment of the harvest.  

 

This is carried out rigorously by hand and in subsequent phases in order to harvest the bunches of grapes whole and perfectly ripe, one by one. Then follows the turn of the cellar: the natural aromas of the grape are preserved by means of gentle pressing and then refined through a careful vinification process with fermentation taking place at controlled temperatures. White grapes are collocated in stainless steel vats, red grapes undergo maceration in the seeds and stalks to then be placed in oak barrels for aging. The production of Sparkling wine using the Charmat method assumes a significant importance with a phase of re-fermentation in steel vats. The Charmat (or Martinotti) method, unlike the classic method where the process takes place in the bottle, occurs in large hermetically-sealed tanks at controlled temperatures and pressure, giving rise to a refreshing, aromatic and effervescent product. The production of wine at Vignarosa is crowned with the Calliselle, a Sparkling Chardonnay made from one single grape, elaborated with the long Charmat method as it rests on the yeasts from six to twelve months, thus guaranteeing the fragrance and character that are typical of the classic method.
